Industrial Way of Making Virgin Coconut Oil

Virgin coconut oil is one of the two largest Coconut Oil the appear on the market shelves. The other one is RBD coconut oil (refined, bleached and deodorized).

What is Virgin Coconut Oil?

Using the meat of fresh mature coconuts, Virgin coconut oil is extracted from them without the application of heat. The word virgin is added to differ it from regular coconut oil in significant ways. These main differences are the source, and the extraction's method.
Virgin coconut oil retains the health benefits, quality, which come with a distinct flavor and aroma.
Virgin coconut oil is considered to be the purest / non-adulterated form of coconut oil and expensive than RBD oil.

How is Virgin coconut oil produced? VCO Flowchart

The main process of making Virgin Coconut Oil can be summarized as following flowchart:
1. The fresh Coconut will be taken from time to time directly from the farm to factory within 6 hours.
2. Dehusking, deshelling, peeling and washing will be process at the same time to making sure there is no delay in the producing process. The by products like Fiber, Shell, Water can will be used the material to make into the other products like mattress, charcoal, coconut water...
3. Grinding the Coconut Meat into very small particles. This process will make the whole pressing time shorter and make sure that the oil will be collected to it full content.
4. Freeze Drying: using the new technology of drying. It's different from the normal step when the Coconut Meat is dried by heat or the Sun. This is to make sure that the temperature can not excess 50oC in the whole producing process.
5. This step can be used by various method:
  • Fermentation method : this is know as one of the oldest process of producing Virgin Coconut Oil. And it can be used at home. In this coconut milk using fresh mature coconuts is allow to ferment for almost a day or two in containers. After fermentation,  there are three layers – coconut oil, water and coconut curd. Coconut Oil is in the middle, water above and crud below. There is certain limitations to this method. Each time, it produces different taste of coconut oil. This is because of the extent of fermentation which takes place. Another issue, sometime, the acid of fermentation are left, giving it even more peculiar taste.
  • Cold press / expeller pressed method : This method require fresh grated coconut meat to be dried and then uses pressure through a mechanical press to extract oil. The drying process is quick and the temperature should never excess 120 degree. In most cases cold press coconut oil has strong aroma and taste.
  • Centrifugal process : This process included taking fresh coconuts and then making coconut cream out of them. This uses centrifugal power to separate coconut oil. This oil has mild flavor and is very light.
6. Filtering: in this process, the oil will go through a mesh size of 5 microns and various step involve.
After that, the oil will became crystal clear as you see on the market.
7. Sterilizing: no more microbiology.
8. Packing: the oil will be packed in moisture free buckets or glass jar for wholesaler or retailer.

Which Coconut Oil producing method is the best?

It is hard to tell which process is best. In terms of processing – the method that least interferes with the raw material is centrifuge. Thus in some sense it is closest to a coconut.

Most of the companies will write the process used to make Virgin Coconut Oil. Depending on the oil type and your pocket, you may choose one that most suitable. In my opinion, the difference between the health benefits of the oil produced from any of the above methods is not that much different.
